Well, she relies on chakra to enhance her strength, and she also relies on it to heal herself. Gentle Fist destroys your chakra nerve system, which means the flow of chakra in Sakura's body is gone, which means Sakura's strength is gone, and her medical ninjutsu. Hinata knocks her out, match over, Hinata wins.

All of the tings you said are true but only if the fights goes in the way of Hinata, Sakura could punch a large whole in the ground and trap Hinata in it. They are equal in ninjutsu and Hinata has the advantage in taijutsu. This is from the third databook. Which is accurate for every character except Naruto and Sasuke. Both girls have gotten stronger since then but I still think the advantage goes to Sakura.
