Kakashi is only able to open one gate as it shows the relative point in the brain where it activates when he was scaling a mountain one-handed. He also does it in the anime where he uses primary lotus on an enemy ninja.

He can open 1st gate and he defenetly saw how Lee opened 5th gate so he can Open from 1 to 5th or 7th gate....

He can use 7th gate cous he fought With guy against bijus and saw how guy opened 7th gate but we cant know he is able to handle it for longer period of time.

He canonically can open 1st gate nothing more, internal dynamics of the usage or gates is not a matter of copying it is training and he himself already stated only few and talented ninja can open the gates.
Also he needs to be accostumated with high speed, obtain high stamina and physical endurance and high physical strength to use gates and execute the tech properly.
