Edo Itachi is stronger than him alive for the simple reason that he's not suffering from his disease that he was dying from or feeling weaken (physically) from his MS usage. When Itachi was alive a ninja could a strategy to block Amaterasu/Tsukuyomi and counter when Itachi it weaken after its usage. It would take a strong ninja to do this but it can be done.

Im not sure where people get this idea about edo having limit chakra, but what i do know is that the only way to beat an edo is to seal them, whilst with a human in itachi's case to defeat and kill him. Nobody has achieved such a feat though
