He did NOT create all ninjutsu, he taught people how to use chakra. For all we know from manga, he had the rinnegan techniques plus "creation of all things" (maybe you misinterpreted that) with which he created tailed beasts.

He created all Jutsu's. He had Living Corpse Reanimation Jutsu. He died from old age, meaning he didn't use Licing Corpse Reanimation Jutsu, meaning he chose not to.

Allow me to explain. Firstly nobody is truly immortal in naruto, the closest being hidan.
Now if you havent noticed the good characters respect the forces of nature therefore they wouldnt seek ways of trying to live forever.

If you saw oro, kakuzu, sasori, hidan, tobi, madara all more or less seeked immortality.

I believe if they sage wanted to he could live forever.
