Since you're asking us now, I'll answer it, I'm pretty sure Gai injured/nearly killed him badly using the 7th Gate, but Guy was going to let him live and take him back in order to extract information etc., in order to stop this, Kisame committed suicide.

Probably Kisame because Itachi is a cripple - he has disease remember.

If it was FULL-STRENGTH Itachi vs. Kisame, Itachi would destroy Kisame, Kisame even admitted Itachi was the strongest out of the pair, that is a basic description of the outcome.

what happens is SPOILER:"kisame is found out by naruto then chased off feeling that he isn't strong enough to fight yamato,guy,naruto and killer bee all at once takes the information he gathered from spying on them and runs off without his swords guy turns into 7 gates and attacks, kisame sends 1,000 sharks at him and guy retaliates with a morning peacock but it is not enough so guy unleashes his secreat weapon the afternoon tiger kisame unerestimates guy and assumes that it's a chakra missle he shoots a shark that absorbs all ninjutsu which makes it stronger but it wasn't a chakra missle but a powerful attack with highly compressed air in the shape of a tiger lol wich guy takes kisame prisoner one of the guys there try too take information out, so kisame knowing that he can not escape kills himself but when they open the scroll they find out that kisame set a trap inside wich traps them inside a water prison jutsu with sharks inside while they are all accupied by the sharks one of the sharks had the scroll and deliverd the message to madara the end"SPOILER FINISHED

You can't "destroy" water, also Kisame controls the amount of water there is, and the whole section moves with him, and he can move I'd say around at least 60-100 MPH, Itachi wouldn't be able to catch him.
