If Minato has enough kunai to cover the battlefield, knocking them away won't do much to change the fact that he's gonna be teleporting every where around him. Its pretty much impossible unless Itachi can intercept Minato before he can throw a single kunai, which I doubt he could given Minato's aforementioned reaction time.
Second, bringing in Susanoo is just stupid. This was a discussion regarding living Itachi and living Minato, and bringing in a Susanoo like that would not happen in that fight. Itachi's not stupid. If they were Edo, Shuriken wouldn't even be a factor. Assuming Minato can't simply bring up Kurama's head and easily block all Itachi throws at him, then how much damage can shuriken even cause. Hitting vitals won't do anything. It'll barely slow Minato down at all. He'd just yank them out and heal them in seconds.

Minato summoned Gamabunta in one go, and that was after fighting off Obito and teleporting an entire Bijuudama away, and after that he still had enough chakra to seal Kurama into Naruto and use the Dead Demon Consuming Seal. His stamina feats far outweigh anything Itachi has ever shown. His chakra reserves are no joke. But that's not the main point, Shadow Clones would barely matter in a fight if the two were alive as you said.

Even if you take into account the Sharingan, Minato's reaction speed is miles above Itachi's in terms of feats. He reacted to Ay himself at full speed, after all. Shuriken, aimed at his vitals or not, would barely be a problem. Don't forget, Minato's whole style is about spreading out kunai throughout the battlefield before he even steps in to fight

There is no way Itachi would catch him unprepared before he can teleport away, especially when the big deal behind Itachi's shurikenjutsu is that he can redirect his shuriken in a way where they land exactly where he wants them to land. Its a very calculated and precise move, but it doesn't really matter when he has no idea where Minato will pop up next.
The whole point of Uchiha style shurikenjutsu more specifically Itachi's shurieknjutsu is to hit the blindspot. Meaning attacking where he cannot see and where his opponents cannot see. You technically should not be able to react to it...but Minato's whole fighting style is about not reamining in one place. He is constantly teleporting. He did that against Obito. Ay and B as well as Madara. The moment his opponent attacks, he's already teleported. How can you rely on planning your throws and where they land against an opponent whose entire fighting style revolves around moving constantly and quickly.

Susano'o reaction speed is exactly what I was referring to, because that's the counter he will need to make to beat any ftg slash on paper. The scan you showed me is ftg speed not reaction. Because Lee already threw the knives at the tsb orbs, it was just in and out with his ftg without even a train of thought. On top of that, we don't know in what speed Gai was traveling towards Madara since Madara was already able to create a shield before Gai arrived.

And the answer is that he can put on susano'o faster than the lightning, making minato's reaction speed pointless to to directly assault itachi with a slash if he can immediately put up susano'o before hand.

Itachi's fighting style is targeting enemies at their blindspot that are behind Itachi's blindspot to draw them out in the open so that he can finish them with one shot moves such as Amatersu, Tsukyomi, and Totsukya. Minimal movement, attacking as all angles, without him and his opponents not knowing where the shuriken or knife is located until after he nails his targets. It's a method he developed to compensate for his lack of stamina.
