I would prsonally prefer Hinata's fighting style. Always have, always will.
As far as skills are concerned, Hinata has more versatility and fluidity feats. Sakura packs more of the explosive arsenal and of course the regenerative feats.
While Sakura has the power, Hinata has the close encounter and quick stances and taijutsu sequences we all love. Just imagine Sakura's share of battle against Sasori. She pretty lasted that fight. Just imagine Hinata in her place. It would have been a delight for everyone to see the Gentle Fist vs Sasori.

Generally it'd be Sakura because the area effects of her Thaijutsu are likely to affect an opponent as well.
