Actually there is. The guide book/scans that came with Boruto Naruto the movie referred to Hinata as Hinata Uzumaki. You can actually go to Hinata's wiki and see it call her Hinata Uzumaki. The same also applies to Sakura Uchiha.

As for Mito and Kushina keeping their names, I think the wife simply has a choice in whether or not she keeps her name (just like in real life America and some other countries)
