There's a jonin in the leaf that can gather intel through animals and still be able to battle like a shinobi.You must really have no idea how important intel really is then. Zetsu was irreplaceable in the akatsuki, a Deidara, Hidan, Kisame can be replaced with other strong shinobi, but to find someone as dangerously unique as Zetsu is not easy. Zetsu allowed the akatsuki to monitor the world around them with extreme ease, that is S rank deserving and then some.

Shinobi ranks are more or less based off threat level and Zetsu is as dangerous as they come. Multiple people have already explained how he is dangerous. No one gives a rats ass about what if scenarios of yours of him entering a ring for a boxing match, within the current structure of the shinobi world Zetsu is a major issue. Threats are only relative to the system they exist in.

If there were only 2 people on the entire planet then sure he's useless, he doesn't have to be able to fight to be dangerous in the shinobi world where intel is highly protected and valued. If you want to know why he is S rank if they don't know much about it, him being in the akatsuki by default would probably place him as S ranks because he is an unknown in the #1 criminal organization, he has to have something clearly valuable to be an asset to the akatsuki.
