I don't feel like watching the Shikamaru episodes but I am interested in seeing how Ino and Sai hook up so do the episodes (now that Shikamaru's story is done) show this or was it omitted in the anime?

It is funny how Ino got Sai to grow out his hair, but honestly- Ino fell for Sai because she felt compassion for his crappy life when she was inside his head.

Plus he also showed her actual attention or affection, which is something Sasuke can't really do.

This is so true but you can't honestly blame him for being so vague with expressing his emotions when you apoporiate everything he went through. Gaiden was horrible...
