Why the heck do they make the anime characters all Western looking but then use the most Japanese looking actors to play them :|

I know this is messed up to say, but...white people do have the most variety to their appearance. Multiple eye colors, hair colors, and very differently shaped eyes, noses, and jaws.

Drawing characters as white gives the creator more creative freedom
