Naruto called Hinata a "plain old weirdo" in the manga and no one of decent status found Sakura even remotely attractive. What? My point is that nobody found Hinata in the manga attractive. Literally nobody. Sakura was only found attractive (nobody called her a beauty either) by people of lower status. Nobody, that had a decent upbringing and belonged to a well-known, prestegious clan found her even slightly attractive. That is the canon source. What you think about the characters doesn't matter. It's the material that counts, and according to that, only Tsunade, Mei, Konan and Kushina were beautiful. That's it.

After hours of arduous research, I've came to the conclusion that this is basically how Hinata in the Naruto live action will look like:

These two models I've found share the same characteristics as Hinata - that's why I chose them. I think she cannot get better representation than those two beautiful ladies.
