The manga makes numerous changes to the anime, omits a lot of pointless filler, adds a lot of charaterization and finer detail, and does so with superior art and creative direction.
But the anime is technically the original, so what is canon?
A major change in the manga is Goku never uses Kaio-Ken against Hit, which in my opinion is a smart move because now they're going to have to explain why Goku never uses it again after that point, which he probably won't. It also made Goku look like a blue raspberry ring pop, which was upsetting to me.
The manga has so far handled Zamasu's character way better, in introducing him to the plot and depicting his personality.
As a former DBZ fanatic I was disgusted by the direction Toei had taken the franchise, butchering the characters into unfunny parodies of themselves and shoehorning cringe worthy comic relief into every second of the already boring and ridiculous story Toriyama had penned for them.
But the manga is actual something I can respect as a story the same way I did the original series, Toyotaru has a clear understanding of what made Dragon Ball Z great that Toei and their team of "professional" writers doesn't.
So at least to me the manga is canon because the Super anime is by far the worst anime I've ever seen. I doubt the manga version will have Zamasu and Black Goku being outsmarted with TEAR GAS.
