Controlled by his will obviously. What Itachi perceives as a threat, it takes action against. I believe Owarij explained this in the past. Also, you overhype Tayuya's Sound Genjutsu. She is my favorite of the Sound 4, but her sound is not instant, especially seeing as Temari was able to negate the sound waves before they touched her, albeit being milliseconds away from catching her.

Itachi is much faster, smarter, etc than Temari. He'd have absolutely no problem counter the technique.

Yata is a simple shield. It protects the user and reflects all incoming attacks.

Also Itachi reacted to Kirin which was said to move hundreds of times faster than Sound.
