Not to mention attacking bee when he didn't know a thing aboit him besides him being a Jin

Obito- rin died and apparently he forgot everything and went against everything she stood for.

Maybe Tobi wanted to test Sasuke to see if he was about the Akatsuki lif XD

Well you need people to be stupid in order to move the plot. If everyone was being smart, nothing would happen. Manga would have ended when the village realized Naruto should be cared for because pissing off a Jinchuruki and alienating him from your village is the fastest way to ensure your village gets blown up.

Madara didn't that I.T. was casted, since BZ made sure no one knew.

Sasuke didn't intend to attack the summit. BZ following obito's orders was the one who made everyone at the summit aware that sasuke was there.
Its not entirely dumb to attack someone with minimal info its just not the best course of actions, however, its not smart to attack someone when you haven't entirely healed from your previous battles.

Obito acknowledged this when he had thoughts on what he should have done

I knew you would be the one to bring this pic up.

However it wasn't necessarily Sasuke who kept it going, it was actually rivalry. The character Sasuke could've been easily replaced, just as long as there was a rival for Naruto.
