In this instance, Kakashi was sure that Kakuzu was dead. He was only focused on Hidan at this point and caught off guard.

Well it seemed like he did it from close range there, so some of the drawbacks are mitigated.

Aside from that, you're forgetting what Kakashi's actual objective was in that initial attack:

Throughout a majority of that fight, up until Naruto shows up, Kakashi is toying with Kakuzu for the sake of Shikamaru's plan (i.e., he had to pretend that he thought he actually killed Kakuzu, and that it wasn't a feint to get some of his blood).

OT: Without Sharingan his going to have hard time anticipating Futon, which neutralizes or beats Kakashi's strongest jutsu. From there, the whole battle becomes the same like in canon.

Use common sense, whos blood would they use as a decoy to trick Hidan? Despite that, they outright didnt know Kakuzu had many hearts/lives, so was needed dead or alive, for Hidan's ritual.

Hard to say. Losing the Sharingan hinders him considerably, but he does possess his father's potential which exceeded the Sannin's strength and the fact that War Arc Kakashi improved immensely.

This jutsu is strong enough to beat Kirin and doesn't need prep time because it's using Kakashi's chakra. It is said that not only it pierced the clouds but it was strong enough to make them part away.
