Why didn't he just kill the Juubi after he split it's chakra into 9 pieces, whats the point of making the bijuus.
The bijuus aren't even immortal they can be killed:

Momshiki needed Kurama alive because he can't take his chakra if he is dead.
I think the point of what Hagoromo did is making humans befriend the bijuus instead of enslaving them for their power
which is the dumbest idea in existence.

automatically get reborn?

So, in a way, they are immortal. However, the regeneration process is painful to them and long. It takes
years for them to regenerate, so no body would want to simply kill a jinchuruuki not because the bijuu
chakra disappears forever, but because it disappears for a huge amount of time.
