Why throughout the Naruto series do we see different forms of Itachi's MS? Does it have anything to do with the maturation of his MS and if so which one is his final stage?

That's not inconsistency. That's his sharingan going through the transition from three tomoes to mangekyou sharingan.

Either that or his sharingan changes depending on ho much power he's putting into it, which would explain the growth in veins in accordance to the size and killer intent of his sharigan shown in those pictures above.

That's not inconsistency. When a ms user uses a ms ability it provoques a huge stress on the eyeballs making them to naturally bleed.

I have only seen the form in 2nd pic in part 1, and apparently the design was changed in shippuden. The eye in the first pic was probably due to the strain on his eyes as he unleashed amaterasu

I brought this up before. The top one is just the "pupil" opening up as he releases an intense burst of Ama.

It's probably just the individual animator's art style. Though you could be poetic and say the thinning of the design represents the weakening/deterioration of his eyes.

I always assumed it just spiraled more to open the hole in the middle when he used abilities. Kind of like he was pushing Tsukuyomi and Amaterasu through his MS.

your first point is correct.. The sharingan was still transitioning in two of the pics
