Itachi was talking about Kurama(or specifically, his Jinchuriki if Kuram's power got out). Kisame said it was great to finally meet "him", with the "him" in that statement being the same as the "him" from Itachi's statement about he'd die if he fought "him," even with reinforcements, and that it was a shame that his babysitter showed up, which refers to Jiraiya.
If Itachi was saying he and Jiraiya would kill each other, then Kisame's statement would mean "It was to great to meet Jiraiya, until Jiraiya's babysitter, Jiraiya, showed up."

But I just want you to realize that by following your belief through to conclusion, you're telling me that Itachi and Kisame planned to commit suicide against Naruto.
Once you realize that, go reread their encounter, see how overwhelmingly in control Itachi and Kisame were of the situation before Jiraiya showed up, and tell me again that their main concern was the Jinchuriki they were laughing at and not the Sannin they ran from.

The bolded is where you are incorrect. Not against Naruto. The Akatsuki almost never actually acknowledged the Jinchuriki themselves, but saw them only as the shells for the Bijuu, caring little to none about the actual person. They are not referring to Naruto, but to Kurama. To them, Naruto may as well not even exist. For example, Pein said he was going to Konoha to find the Nine-Tails, not to find Naruto.
Your argument says that Kisame thought it was great that they met Jiraiya at the Ramen Shop(they met him in the hotel), but it was a shame that his babysitter, Jiraiya showed up. The fact that that somehow makes more sense to you than them referring to Kurama as the one that could kill them(we've seen what Kurama's power can do in the war, matching the power of five Bijuu bombs on its own), and that it was a shame that Jiraiya interrupted them meeting Kurama. That says a lot more about you than it does me.
