But maybe Capone men snuck up and captured Nami and chopper before they even got the chance to fight. You're making it seem as if his men charged head first trying to attack. Capone seems to be one of the smarter members of the worst Gen so it wouldn't be surprising if he had this planned from from the moment sanji nodded at him.

Also the SH's didn't want to get the minks involved

To answer your question Sanji and Brook didn't fight because Nami and Chopper were already captured and taken hostage.

You can't expect the SH's to get out of a situation with every opponent they meet. It's impractical since they rarely know their opponents abilities.
