Domu is unaffected by all physical attacks, so even if Gentle Fist were to attempt to disrupt the flow of chakra in Domu, the Gentle Fist attack itself would still require physical contact, which Domu isn't affected by. Even without Domu, given the distance they're set at, Kakuzu still cleans up quite comfortably. They're too far apart for Hiashi to immediately engage in CQC, and too close for him to dodge Kakuzu's mask combinations in time. Air Palm is to focused and therefor easily dodgeable. Maybe if Air Palm were as widespread as Kakuzu's mask combinations then maybe he would have a chance. Of course, Hiashi has shushin feats but that won't last him long.

I wasn't very serious, I thought it'd be evident by referring to the attack as magic fingers. Though, I'm afraid I don't understand your counter. The physical touch isn't what does damage with gentle fist, so domu not being affected by it doesn't matter.

Because having a 5 in Taijutsu and Genin Neji landing about 30 hits almost simultaneously twice is not a huge striking feat for Hyuga's right?

I think you're a little confused. Domu does nothing to prevent the physical touch. It does not matter that domu isn't affected by physical attacks, because the attack itself is not the jab. Look at the diagram given when he fought Kidomaru to get an idea of what I'm saying. The chakra is coming out of his finger tips, that is the attack.
