Orochimaru is already immortal and Sasuke has the means to become immortal, but he chooses not to reach out and grasp it.
Besides, Orochimaru has no need of Sasuke anymore.
All the Sharingan was to Orochimaru was an easier route to learn every Jutsu there is. With unlimited time the Sharingan would be convenient but unnecessary.

Orochimaru is immortal, he will outlive everything, so sayeth Kishi. In that infinite amount of time, it's impossible for Orochimaru not to perfect Fushi Tensei.

That would be true "if" kishi willing to continue the series, but the state we are right now it didn't happen, Orchimaru is still developing that immortality technique right now you're just buying this whole hype and you know how it rolls cause the hype was never real (for the most part) BUT still fushi tensei requires new host bodies and if orochimaru can find strong vessel then it grants for lifetime but still that jutsu is not truly immortal as long he stops finding new body.

Well he's still all about human experimentation, and Naruto straight up questioned how Orochimaru still looks so young, to which Orochimaru replied "don't think about it matey". Imo he's just laying low, not causing harm intentionally (Shin was almost entirely his fault). Once Naruto and Sasuke die, Orochimaru's true colors will be revealed.
