It was actually because she considers the medic the most important part of the team. Furthermore, medics are well versed in poison, and chakra scalpels, which should be enough for self defense.

Simple. Rin was fighting opponents that outclassed and outranked her and her teammates, since Kakashi made it his personal job to defend her.

A brown belt in Karate can lose a fight with s black belt but that doesn't mean they're not capable of fighting.
