Obito was causious of Itachi, that doesn't mean he couldn't beat Itachi in a fight. That's like saying Orochimaru was scared of Kid Naruto in part 1 after seeing that he could use the Rasengan because he didn't want him to get into Akatsuki hands. Orochimaru actually said Itachi was stronger than him, Obito never said this; only shown concern which any Kage level ninja should do towards another Kage level ninja who has skills, power, and smarts. SM Kabuto being scared of Edo Itachi was plot, he could have neg Edo Itachi but ending Edo Tensei, his only reason for joining the war was to get Sasuke not to win the war yet plot made him care about keeping Edo Tensei up? Coffin Edo Madara, Edo Kimimaru, Edo Chiyo, and the Edo Jinchuurikis then either end Eso Tensei for the Edo's left or summon those coffin Edo's to beat Sasuke and Edo Itachi.
Itachi wasn't really that feared, he was known but what did he do that other people know to cause him to be feared? They think he single handily wiped out the Uchiha clan, was an Anbu at 13, is a master at genjutsus, and in Akatsuki. Orochimaru kidnapped kids/women/Anbus to experiment on, joined Akatsuki, killed the 4th Kazekage, caused Hiruzen to die, attacked Konoha, and summoned all 4 Edo Hokages which he could use for whatever he wanted.
Minato tracked and beat Jounins who captured Kushina, almost single handily defeated Rock nation (about over 1000 ninjas in the anime), is so feared that flee on sight orders were given to all rock ninjas meaning even Oonoki feared what Minato would do to his ninjas, fought A and Bee on multiple occasions (A is Kage level and Bee is over Kage level as a perfect Jinchuuriki, even Hiruzen gave Naruto the last name of Uzumaki instead of Namikage because if any of Minato's enemies knew Naruto was his son then it would be bad for Naruto and this is comparing the Uzumaki clan being nearly wiped out because people feared their sealing jutsu power, oh and add that he was a master at using Uzumaki sealing jutsus which was highly feared.
