If you think about how one's sight works, there is no reason why sharingan should stop Sarada needing glasses. Light rays bounce into the eye and cross at the retina. If the eye is too short or too long, if the lens is the incorrect strength, or if the cornea is the incorrect thickness, the light rays don't cross at the retina and glasses are needed to correct this. Therefore the sharingan would actually have to be physically changing her eye in a way unique to her to make the possibility of correcting her sight.

Sarada was sick when she was young and that's why she has to wear glasses. If you notice she didn't have glasses before she got sick and after she did.
