Madara was not defeated by Black Zetsu, he was never in combat with BZ. Black Zetsu's body was just the key to activating Kaguya's rebirth once everything was in place and Madara had taken all the nessesary components inside him while in the dark about the true reality of what he was doing. He had complete confidence that everything was under his control and that BZ was his own will and thus couldn't possibly back stab him. He had all his and his limbos' attention focused on Team 7 and Obito allowing Black Zetsu to stab him and make his body react with Kaguya's chakra. Nothing to do with Zetsu showing up anyone with his own abilities, moreso just exploiting Madara's trust to make him a living cocoon. Without Kaguya's chakra having such properties to allow a reaction to Kaguya's own manifested will Madara wouldn't have been defeated by such an attack.

Black Zetsu played dirty so he can't really claim any sort of victory over Madara other than crushing his dream.

But Madara trusted him so he didn't think to prepare for an attack. If Zetsu managed to stab him while Madara knew he was a threat that's different, but Zetsu simply took advantage of the situation and used Kaguya's chakra within his body to make him explode. Not that impressive if you think about it.
