Wot. That was not aimed at him, it was aimed at the floor to prevent Kabuto from reaching them and heat up the cave. That's not evasion, that's reacting to an already present Amateratsu and deciding to stop. It's a feat that even Tsunade could replicate (not joking). And yes, I never suggested he couldn't shed his skin to escape it. But in a situation where Kabuto is trying to use Tayuya's flute, an Amateratsu could quickly force him to use Oral Rebirth and come back in a state where he's no longer attached to Tayuya.

.... .... ??????.... You are aware he is capable of regenerating the sound five as fast as his own body, correct? As for Sasuke aiming at him, he more than likely did seeing how he can extinguish the flames as seen in the killer bee v Sasuke fight.

I didn't read the last part, but given his appearance when he healed Sasuke, nothing suggests he lost anything.
Regardless, even if evasion isn't possible (which Ay has shown to be possible; it just stands to reason does Kabuto's superior reaction speed to Ay let him dodge in spite of the fact that he's slower than Ay?), there's still shedding his skin and liquifying his body. This on top of his regeneration ability. Amaterasu really isn't much of a factor. Muki Tensei can be used to set up Senpou: Hakugeki and after that, Itachi is done.

Itachi himself stated that under any circumstances, neither he nor Sasuke should use skills that could be deadly to Kabuto because he did not want to kill him. He didn't even use Version 2 Susano'o, let alone his best version.

Under the circumstances that Itachi was found in of not trying to kill Kabutomaru, even Orochimaru would hurt him like Kabuto did if he's invulnerable to Genjutsu. We all know what happened to an Itachi that was about to die with just the sole intent of killing: he still wrecked Orochimaru with a technique that he did not use against Kabutomaru because of obvious reasons.

Outside of a 5 meter distance dodging is possible. Within that radius it spawns instantly on the target. Outside it would need to travel the path that the eye gazes upon, which still means Kabuto will be caught given his speed isn't enough to leave Itachi's gaze. Thus the only counter is speed, not reaction speed (only holds significance if you have the speed to dodge it in the first place). Shedding his skin would counter Amateratsu, but liquefaction would make his bodily fluids evaporate and die. And yes, he has regeneration but the Sasuke that got burned through in under a second also had White Snake powers (not Karin level, but it's still healing). And I don't believe OP stipulated this is a cave, no reason to believe it is. But in the case it is, this is manga intel meaning Itachi breaks it with Susano or Yasaka Magatama before it can coil around the orb.

And kabuto was also well aware that he couldn't kill Itachi because he was an edo. Kabuto wanted to rewrite itachis seal so that he could control him again. Kabuto also didn't want to kill Sasuke, Kabuto wanted Sasuke for himself.
So Kabuto held back as well, not sure why people think only the uchiha said did. Kabuto's intention was only to apprehend the Uchiha bros.
At the end of the day, alive Itachi can't pull off half the feats he did against Kabuto. He'd keel over just at the thought of using MS techniques, that's if he doesn't die of aids first.
