Am I the only one who dislike a character getting one shotted after they've been hyped up?

Doflamingo already lost any hype he had pre-timeskip, back when he was seen as a real threat, possibly one of the last villians.

It's a good thing neither Vergo nor Doffy could be considered one-shotted by Law and Luffy respectively.

no not the only one... im convinced the reason why law one shotted vergo is because he mixed all of his haki into his room ability which allowed him to cut through not only him but his bamboo stick as well

Doffy was already hit several times by Luffy so it is impossible for Doffy to be one shotted.

The contexts are pretty different. Vergo was meant to be stronger than Law and looked for a while like he was beating Law up but Law showed his df powers had improved beyond expectation and the one shot was pretty epic. Luffy and Mingo traded blows but when Luffy stepped it up to gear 4, there was clearly only one winner. Now the suspense was around "will Luffy make it back in time to finish the Job before Mingos Birdcage?" which is a bit more predictable because the answer to that is what it always has and will be: Yes of course. This isn't game of thrones! So if you ask me it's not as intense as Law v Vergo because that fight wasn't so limited by main character plot armor and shonen trends (law losing a fight is more believable than an entire islands population dying before Luffy gets his haki back in time to save them). It will still be epic though. Doflamingo has been a great villain so seeing him finally go down will be very satisfying.
While its not a one shot, the correlation is that the whole fight has come down to one blow, if Luffy lands it he wins, but he has mere seconds to land it.
Actually that's how pretty much every fight ends.

luffy was beaten by doffy with law together (well not fully but outmatched)
even when fighting by himself he shown to be inferior
when gear 4th happened he got upper hand (also gamma knife happened making doffy injured)
but even after 20 min of getting hit in gear 4th luffy's tank blew out while doffy was still able to stand perfectly fine (yes he took damage but still was able to move attack etc. unlike luffy who was put on his back)
now a whole 10 or 15 (forget which) min have went by where luffy was hiding and doffy fighting other ppl (fodders viola etc.) while luffy gets to heal (by hiding from doffy and also u can include mashelly tears as well they most likley hit luffy seeing as it was around all of dressrosa) now luffy is came in for round 1000 with doffy
luffy has yet to actually win any of the rounds that he has faced against doffy
he just keeps on getting knocked to other places where he fights fodder (belemy) or gets a partner (law) or runs away and gets to recover while doffy is still fighting etc. no recovery
luffys fight with doffy is similar to the war (ivankov kept healing him) or fight with mellgalan (poison) he needs help to defeat him and thats what has been happening entire time
it is far from a one shot....
