I saw(read) somewhere she has 3 T. Unlocking a 3 T would generally mean that she has 1 T or 2 T before . That would still mean she had Sharingan and then should have had no doubt

I'm pretty sure you misread because it was said that she only had one tomoe sharingan.

Even so though, I'm pretty sure obito awakened his sharingan with 2 tomoes and not 1.

So Sarada has Sharingan ? Because that would make her doubt ridiculous. Why would you doubt being an Uchiha and being Sasuke's daughter if :-
1) You have sharingan
2) You know Sasuke is the only Uchiha alive
That would make first 3 chapters stupid

Also even after all that, she picks up lunch before anything else. What is she doing with it ?

She doesn't doubt that Sasuke is her father, she doubts that Sakura is her mother... She has them good instincts to find out that she is in fact the daughter of Karin...

Well Obito unlocked 3T in one eye before without even having Sharingan prior to that
