Because while alive Itachi can barely keep Susanoo up, Edo Itachi can basicly spam Totsuka (which is a one-shot should it hit the target) and keep Yata with 100% uptime, which makes him invulnerable to Minato.

Actually this is incorrect. He can only make 5. The reason there were so many during the war was because he used Naruto's/Kurama's Chakra sharing tech in tangent with Tobirama's seals.

OT: Yeah you are underestimating Minato OP. As far as Itachi goes, IMHP these 2 are dead even and it could go either way. but everyone else you mentioned would be handled by Minato as easily as Itachi would and in some cases did.

Example:

Deidara-all his explosive can either be avoided (long distance isn't going to save him against a teleporter who has the place marked up) or teleported away somewhere else.

Kakuzu- a challenge yes but Minato is too fast for all his masks and can pretty much destroy all 5 mask simultaneously if Kakuzu seperates them from his body to do their elemental attacks.

Shisui- That's like fighting itachi so it could go either way, maybe even more so in Shisui's favor

Orochimaru- is powerful but i don't see him winning against Minato who is just too fast for him

Muu?- going invisble isn't a guaranteed win, especially against someone who is known for being able to figure how a jutsu works after it is only used once.
