Im not sure what can Itachi do against the hidden mist. If he tries to blow it away with katon Zabuza simply counters with suiton. I give it to Zabuza more times than not.

Zabuza already showed he can avoid genjutsu by putting his v2 mist and fighting with his eyes closed, the mist is so tick that Kakashi could barely react to his movements.

Zabuza outsmarted and outspeeded Kakashi in their first encounter, he has decent speed and intelligence, not to mention water prison is an excellent jutsu against Itachi if Susano is restricted.

Itachi wins because he evaporates the mist. If we restrict that move from Itachi then he can't win, since Zabuza+Haku vs Itachi would be the same result of Zabuza vs Part 1 Kakashi (without dogs)

Itachi can't use Genjutsu here so cut the crap, Zabuza closes his eyes. His speed and taijutsu prowess are slowed down a lot because of Zabuza's mist, and Zabuza also has good skills at clone feints (he was able to outsmart Kakashi on this category, while Kakashi outsmarted Itachi here).

Itachi wins if he evaporates the mist, if we restrict that, Zabuza and Haku would win.

I say that since Zabuza is getting Gato and his gang's help, they could be used as a distraction even if it's a short one. Itachi still is very probable to win this case but like you said, Mist restricts Itachi's movements a lot. On the second scenario where Kakashi comes in, it would most certainly end in Kakashi's demise.
