Haku can literally freeze air and spawn thick durable ice anywhere... Sasori be literally frozen. The human body is like what? 90 something degrees on average? His wooden body can't and doesn't produce any body heat to protect him from freezing air. His joints would be frozen, rendering him incapable of moving.

He wins low diff ,only because Zabuza's speed is greater than Sakura's and Chiyo's, and they managed to dodge his atacks for a while, so Zabuza inside the mist can keep up with him for a long while but he won't even come close to hurt him .

Lol no Haku can't actually, show me any feat of this? He creates ice with ice style he can't just spawn ice from any range he wants. He can spawn his metallic blades to break him through it if he needs to anyways.

OT sasori wins w/ iron sand. he can levitate above the mist, where only haku is a threat & even then can do nothing truly offensive in mid air.
zabuza gets overwhelmed. haku faints from exhaustion or runs away(or more likely, sacrifices himself again, in vain)
