Consider this: Even if after this whole quest, it turns out that Karin is Sarada's mother, so what? What happens next? Sarada has lived with Sakura her whole life and will probably just go right back to Sakura after this quest. Sasuke will probably still have missions. Nothing about Sarada's life would really change. She'd still live in the same place, go to the academy, become a ninja and live as she always has regardless of who her biological mother is.
What, do you think that if Karin turns out to be her mother that she'll just suddenly go out and live with Karin from now on? Will she start learning the ways of the Uzumaki clan or something? I highly doubt it.
In a nutshell, I'm just saying that most likely nothing will really change after Sarada gets her answers. The only possible thing I could see happening is Sarada potentially turning against the village if the truth of her origins is bad enough (similar to how Sasuke wanted to crush Konoha after finding the truth about Itachi). Other than that, I don't really see how things would change a lot?

Mitsuki said it out loud. Girls of this age start questioning their existence and self-worth. Sarada just wants to know her identity. The next thing Mitsuki said was he told Chocho she doesn't need to look at her family crest to know who she is. The next couple of panels after that seems to show that Sarada, even with a crest, still doesn't know who she is.
I think the real question you're asking is whether she'll gain anything by finding the answer? Shonen Jump Alpha's first digital release of their magazine celebrated with a Kishimoto interview.

where Kishimoto mentions that one of the most important experiences in Naruto's growth is discovering his identity by meeting his parents. He says stuff like:He had a lot of hate and anger towards the world because he didn’t have an identity.
When Naruto found out about this truth, he became more aware of his life’s purpose. He realized who he truly needs to become and what he needs to do to fulfill his dream along with his parents’ hope.
Love is a great thing. Since I became a parent, I truly believe (although there might be a few exceptions) that parents all over the world always love their kids. When children can truly understand the love from their parents, it greatly helps them find themselves. So I really wanted to give Naruto that experience.

I bolded the part where, by finding out who he is, Naruto "became more aware of his life's purpose" and "who he truly needs to become." Naruto Gaiden takes place with the ninja graduation exams looming, right as Sarada is asking such existential questions about her identity and what ninjas are for and stuff.

Her dad is a reincarnation of one of the two dudes who inherited the role from the ancestor of shinobi himself to facilitate peace. So, finding out about that is pretty seriously going to answer her question of what being a ninja means. If, like Naruto, she figures out what her purpose is she might realize she needs to be one of the best ninja.
I do think that not being able to come up with an outcome outside of going home, or deciding to live with Karin doesn't mean that those are the entirety of possible outcomes that can come from finding out who her parents are. It just simply indicates a lack of enough imagination to come up with more. She could go back and, now having a better understanding of what it means to be a ninja, start training hardcore instead of half-assed like she would if she went into her career confused.
