Tsunade remains but Kisame can saw her limbs off with Samehada or stick her with a bone and suck or dry of chakra, or trap her in a water prison and drown her.

Samehada mode kisame can sense the chakra so he would know in which katsuya itachi and tsunade e hide and ignore the other katsuyas

Interesting match up indeed , It all depends on whether samehada can send chakra to kisame to break genjustsu(tsukuyomi will still have its effects on him tho). Mizukage is pretty useless in here but I guess water doom would one shot tsunade unless itachi uses his sousano to move inside the doom.

The likes of early part 2 team guy, involving tenten, base lee and nejji were able to evade the suiton, and were unharmed
itachi and even tsunade can evade it all together, its not phasing them even in the slightest

Doesnt prevent her from getting hit, the mist is just a cover that she forms, but that still wont change the fact that shes far too slow to evade amaterasu, so even if itachi aims at the exact same location where he saw Mei prior to using the hidden mist,
mei would still get hit since shes too slow
there is also the fact that during the time shes using the hidden mist, itachi can intercept it all together by using amaterasu

That wont be a factor, susanoo tanks that just fine, and byakugo helps tsunade regenerate from any damage that is being dealt, till she gets close to mei and smashes her brains out, thats if she manages to prevent herself from getting one shotted before that even comes to play

Nope, susanoo swings its blade and all the water around it gets pushed back, similar to how 6th gated guy compeltley repelled the entire sea of water that was around him, a byakugou enhanced V4 susanoo would do just fine
susanoo is far more sturdier and more durable than any opponent that kisame has faced,

a small V2 susanoo was able to tank meis acid mist and keep sasuke safe, itachis higher susanoo enhanced by tsunade is not getting affected, ever,

itachi isnt getting vulnerable here either, not by the likes of water dragons, great colliding wave or meis jutsu,
there is also the fact that all itachi needs is to swing his blade towards kisame and he gets cut in half,
he is bound to get tagged by susanoo considering that itachis reactions aided with MS precog is bound to make him capable of doing such thing,
and there is also the fact that kisame has no counters to totsuka, he gets hit and sealed, and that is certainly quicker than any strategy that you have mentioned here

there is also another fact that itachis reactions and speed are well above the likes of kisame considering he blitzed Sasuke and nearly blitzed killer bee, and was able to fight KCM naruto in CQC,
kisame being a CQC fighter means that he inevitably gets caught in tsukuyomi, which is another GG for him,
his water clones are not preventing him from it seeing how the sharingan would see through them, and he isnt skilled enough or fast enough to evade eye contact whilst fighting a faster opponent

itachi backed up by tsunade powering his susanoo up means that he isnt getting affected by the strain of MS either, whilst kisame who is inferior to itachi to begin with backed up by someone who gets one shotted by a plethora of jutsus means that they obviously lose

Suiton is not real water though...Its disappears after a while. Its chakra water. The user not only turns their chakra into water but salt aswell? Like since when?

He only ever summoned a real shark right before his death. And then that real shark gets into ocean water immediately. Throughout all his fights he never used a real shark until then so the shark argument makes no sense.

Even in acutal salt water he created sharks out of water.
