Sasuke canonically admitted inferiority.
how does Sasuke put down Hydra?
Don't see it tanking Kirin, but Sasuke would need knowledge so he can prep it throughout the battle.

Although realistically I don't see why gen wouldn't be perfect for countering Hydra.
Because the Hydra is Orochimaru and Orochimaru is immune to Sasuke's 3-T Genjutsu.
Enough CS2 Senjutsu Fireballs should be able to start up the tech. But once again, if Sasuke doesn't begin prepping as soon as possible he'll be in trouble.can Kirin be used only by heating the air with Dragon flame tech?
because when Sasuke used it he also made use of Itachi's Amaterasu heat
although the databook only mentions Dragon flame as requirement

Orochimaru's is immune to 3 Tomoe gen? How so? ( not saying you're wrong I'd just like a refresher)
No problem, easy thing to look over. During the immortality ritual, Sasuke put Orochimaru under Genjutsu like Itachi did before. Only this time Orochimaru immediately breaks it.

Itachi + Kisame admitted inferiority to Jiraiya. doesn't mean Jiraiya can beat them because feats say otherwise.
same logic. plus Sasuke never outright said Orochimaru is stronger than him.
Itachi and Kisame stated that about the kyuubi. Note the wording in the panel below.
"Even if you might be able to take HIM on, I'm not so sure about me."
"It was great finally finding HIM at the ramen shop, but HIS babysitter was one of the three great shinobi of konoha legend."
Jiraiya is babysitting Jiraiya? No. Jiraiya is babysitting the kyuubi jin.
All that was said about Jiraiya from them was that he was a Legendary Sannin and their titles paled in comparison(Kisame saying that), and Itachi claiming "even the strongest heroes have their weaknesses".

Kisame even states after running in to Jiraiya, Itachi didn't need to retreat:

So no, the only person who was admitting any kind of inferiority to Jiraiya was Kisame, which is factual because Jiraiya does indeed > Kisame. Itachi claimed they were more along the lines of equals, if not slightly above Jiraiya. Which is also true.
Here's two different translators commenting on the raw japanese text of the Itachi/Kisame conversation:

Translation and opinion as well as comment from Monzaemon: "I don't know about me, but I'm pretty sure you could've handled him"
"Hmmm...we would either both be killed, or it would be a draw. It wouldn't matter if we went in with more people or not".
Kisame brings up a certain individual, who Itachi states that they would die fighting against, and that it wouldn't matter if they went in with more people or not. Then the conversation continues:
"His caretaker is one of the legendary Sannins".
In the first part of the dialogue, they were talking about a certain individual, who they refer to as "him", and then they switch their conversation that same individual's caretaker. "His" caretaker.
Comment from Gottheim: I've translated that little bit myself a while ago, and I've come to the same conclusion as the OP. Itachi wasn't referring to Jiraiya but to Naruto. He was expecting a fight against Kyuubi in a human form. Probably less powerful, but protected from MS. Jiraiya came as an afterthought: not that he was deemed a negligible threat. It's just that everything pales in comparison with the power of the Nine-Tails.
The Viz translation that I posted makes it clear enough, I think..but since you don't think so, that above should wrap it up, at least.
