With all honest say, nothing. I understand that it's liquid and tangible, everything that IRL science has told me. So nothing from the naruto world (except movies/episodes). Now, projectiles move in a certain fixed direction, unless their direction is externally changed by blowing wind, water, etc. With projectiles the user gathers all their chakra into one central focus point and releases the chakra all in one burst or divided in several bursts, meaning the chakra is concentrated at one single point and thus the area of damage is short compared to streams, however due to the concentration being large, one single point when hit by a projectile faces massive damage.
Streams: A stream is a constant and well defined flow of an any material. For eg: a stream of wind. Here, you gather chakra, and then simply release it in a steady flow outwards toward your target and you maintain that steady flow until the chakra you've built up for the technique is no longer there. This means that streams have their power spread out evenly throughout the technique as opposed to several individualized burst of chakra that have their own capabilities, meaning you have to constantly focus on your chakra, however, you're free to alter the direction of your attack, since you still maintain the control over it until the amount of chakra that is built up gets exhausted.
Calm your body and mind, and chakra chakra inside your body just like with any other jutsu. The chakra needs to be low as of now, and go close to the water source when you are done collecting. Now, close your eyes and extend your hand, let the chakra flow from your hand, and towards the water. Start thinking about the idea of water itself, the element and it's powers. Start affecting the water with your chakra and create small waves, by moving it forward and back....Then slowly lift the water into the air, and with the shape manipulation create some shapes. (Kirigakure No Jutsu) - Hidding in Mist Jutsu

Description: This displacement technique creates a thick mist to spring forth by lifting up some water from either a pre-existing source or expelled from their mouth, then goes in and out of sight at will from within the pearly-white realm. The mist's thickness is controlled by the amount of chakra kneaded into it. It can't fool the Byakugan, but, due to the mist being created with the user's chakra, any Sharingan and Rinnegan-user will see the mist coloured by their opponent's chakra, which will effectively hide the user from the dōjutsu.
Note: Can be created through releasing from mouth or manipulating a nearby water source.
A very nice technique and used to be a personal favorite. With this technique, you will use water around you or use your mouth, to create a thick mist which will cover the entire battlefield. You will release it from your mouth naturally as mist, or use a water source like a lake or a river and evaporate it, creating mist. This mist is very special, and it it because it is made out of your own chakra. This means that you can fool the sharingan completely as well as the rinnegan. Since it can see different chakra types, the hole battlefield will be colored the same and you can easily vanish through it. Though it can fool those 2 doujutsu, you can't fool the byakugan, so be aware of your enemy. The last thing is that this technique can easily blown away using any kind of wind technique, so take that into consideration.
(Suiton: Mizu Kuri No Yaiba) - Water Style: Sword of Draining

This technique is not really unique in on itself, but you could find some usages for it. You will use the water you create to form a sword...nothing much to it. This sword is not tough enough to battle with real swords, but it is very versatile, since you can create it everywhere. It even helps you fairly much whenever you need a weapon ready.

Alright, this is a purely defensive technique. You will release the chakra from the arms and shape a water shield right before you. This shield is tough enough to stop projectiles because of it's density. But you can even use it to stop op to C rank fire techniques. Best thing is that it is very very quick.

I like the star thing but you didn't elaborate a lot. Sorry but i will need you to try again and this time think more about the technique. tell me why would that technique you chose be first, why would the range compliment this ability, why would it help you to win against sharingan users, how how you use it in combos in the future, against what other techniques can it help you with. About the second one, tell me what does it have less? Why is it not usable against other swords or any other techniques in any way. Words, words, words. I need more reasons why you stated them. Sorry...it isn't really my style, but I want to make you understand this method fully.

Description: After the user performs a series of 3 hand seals Rat → Dog → Ox, the user creates a whip of water that can be used to strike the opponent with a lashing action or wrap around the target to bind them. This technique can also have lightning techniques channeled through when they have bound their victim with the water whip.
A fairly nice technique. You will simply make 3 handseals and extend either of your hands.Now whenever you are ready, you will send your chakra to the hand and create a whip of compressed water up to 10 m in length. his whip is fairly strong, with one swing it can easily kick away projectile weapons. Another thing it can do is warp around the enemy and restrict his movements. Now if you would charge lightning chakra through it, the water can help you conduct it to the enemy and give him a nice shock. If you think outside of the box, you can warp your enemies body parts, pull them, rotate them, and use the damage as a whip itself and cause a lot of harm to everyone you will strike.

Description: The user After performing the required hand seals Ram → Tiger spits out high-viscosity, chakra infused water, aimed at a surface of wide scope. This is a stream of sticky liquid which can be used to form an adhesive trap that can inhibit a person's mobility. One can effectively reduce their enemy's area of activity with this technique, and has the effect of being able to take complete control over the battlefield. The normal scope of this technique is normally just a few meters, but if prepared, it is also possible to make an entire pond of starch syrup. Being caught in the technique can be avoided by channeling chakra to one's feet allowing one to walk upon it uninhibited, beforehand.
Another fairly useful technique. You will simply make 2 handseals and charge water chakra inside your body, whenever you are ready, you will release the water from your mouth, directed at the ground as it spreads widely. This is not a normal water though, this water has a very high viscosity. You can negate that when you charge chakra in your feet and you would be able to walk through it. But if the enemy lands on it, he will be stuck in place, he wouldn't be able to escape from it. Since the enemy can't move anymore, there are millions of combos you can use to finish him off.
(Mizu Bunshin) - Water Release: Water Clone

Description: After performing the Tiger hand seal the user creates a clone of themselves made of water. These water clones have 1/10th of the users chakra. These clones are also limited in that they can only travel short range from the user without losing control. When a water clone take enough damage they revert back to normal water.
Note: Can only perform up to C rank Water techniques and requires a water source.
The water variation of maybe one of the best techniques in the entire RP. You will perform he tiger handseal when you are close to a water source. Then you will control the water to slowly rise and shape up in a copy of yourself. This copy has 1/10th of your own chakra and is able to perform only water techniques up to C rank. Another disadvantage is that after about 5m's of distance, the clone will naturally break apart and turn into a puddle of water, so you wanna keep them close.
