If you saw the Omake of Katsuyo, Manda and Gamabunta you can see that Snakes and Slugs don't get along

They fly, which can be beneficial for a fire user like Sarada, and not many people can fly nor have OP long range attacks.

Slugs in NV are much more diverse. They're almost impossible to kill, and they have an attack that can even end Orochimaru. They can also give support by protecting her healing people via byakugo no in.

If you pull a fight with someone that can summon any of the legendary animals have a hawk won't help you that much since their animal are really big and strong enough against fire (maybe not so much katsuyu for being a slug) wouldnt keep up

Does Sarada seem to have more the Medic ninja profil? She seem smart but medic power + byakugou + snakes can work?

Byakugo no in and Katsuyu are connected. If you have byakugo no in you can summon Katsuyu.
Snakes wouldn't be as good as Katsuyu with a byakugo using medic. Only perk it brings is that it can move fast.
