Old age had a huge factor in the fight against Orochimaru. In one point during the battle, making 2 Kage Bunshin was practically suicide for Hiruzen. His body at the time wouldn't be able to handle the Gates.

8 Gates would have done no good vs ET Hashi/Tobirama, they would have possibly wrecked havoc on Konoha, as Jiraiya was the only one left in the village on that level.

Nor is it likely that Hiruzen would be able to move very well in Gates in his old age. He had issues handling Enma, can't imagine the strains gates would have put on his body at that age.
