You need both eyes to use all Six Paths the only exception is Sasuke since his Rinnegan is different from the rest. With one Rinnegan you can use Preta Path, Human Path, Animal Path and the Outer Path.

Obito already implied that you can use all 6 paths with Rinnegan when Gai confirmed he didn't have enough chakra to use them with the jinchuuriki.

The only ones Obito really showed were Preta Path when he absorbed Chakra from Madara and the Outer Path. It was stated in the Databook that Obito could use Animal Path and Obito himself specifically stated he could use Human Path.

So those are feats of what the One Rinnegan can do since he's the only one who had the Rinnegan with one eye.
