Gaara might as well be saying, "Now that my sand is lighter, I can use it to pull Madara from within Susano'o."
Whether this has to do with Madara's reaction time, or his ability to penetrate Susano'o has yet to be seen. Regardless, he could not do whatever he did without Onoki.
He could do it with his normal sand, it'd just be less likely to catch him. Remember, Oonoki making something lighter decreases its strength. So, Gaara's normal sand would have a stronger grip and be heavier, so it'd be harder to break out of it.

However Nagato used Human path or Naraka path to pull soul out of Naruto's body, but Naruto could grab it with his chakra arms and even able to resist or pull them back, right ?
Soul is spirit/ethereal matter and yet it was proved chakra arms could grab it, it means that spirit/ethereal matter is special kind of chakra in some form at least ?
It means Totsuka and Yata Mirror aka spiritual weapons being manifested with use of chakra of user along with Susanoo. It could mean Preta path would absorb them in chakra form making wielder unable to bring them back until he has enough of chakra.
It also means Totsuka can be grabbed and basically anyone with strength above Complete Susanoo could lock Totsuka making Itachi unable to pierce and seal him/her.
All Ootsutsuki memebers of clan mentioned by me are much faster then Itachi, and with Goudama capable being shaped into hands:

^^ chakra construct can be grabbed, considering that goudama hands may came in contact with Susanoo also then Susanoo will nulified and Itachi will be open for attack.
Kaguya could also use chakra arms to lock Totsuka then grab Yata and rip it from Susanoo grip.
Summary: Anyone with Susanoo, Chakra cloak in any form, with strength on par or above Complete Susanoo, speed reaction time of Itachi or above and durability above Yasaka Magatama + resistance to occular Genjutsu, which means:
Kaguya, Hagoromo,Hamura, Ashura, Indra, Madara, Naruto, Sasuke, Obito(if Susanoo is counted) + maybe Nagato could beat Itachi with his all hype of Totsuka and Yata. Of course knowledge on it is crucial and necessary.
To beat Itachi you need:
Intel, being faster,having chakra form limbs to grab Totsuka, have strength to lock Totsuka in grip, having enough chakra to outlast Itachi while using some jutsu, being immune or almost immune of occular genjutsu, durability above multiple attacks of Yasaka Magatama + could have attack powerfull enough to bust Complete Susanoo
or
INTEL, Being super fast and having way to end Itachi in one attack before he can react, genjutsu resistance recomended
or
INTEL, having hax to pass through them, supperior reaction time and fast powerfull attack enough to End Itach's life in one attack
Without Intel Itachi can beat them also, ONLY IF HE HIT THEM WITH TOTSUKA FIRST, that it Lol, good luck with it

I agree with mostly everything you wrote. I only wrote mostly because we could start a whole new forum on Spiritual AND/OR Yin Chakra/Release (depending once again how you view or go about the aforementioned).
As for pretty much every poster on this thread stating Itachi then died 5 pages later, etc... I hope this is just sarcasm or a sad excuse of a joke because Itachi pretty much planned that fight down to every last detail - including dying to Sasuke...cause let's be real for a second, Itachi wins that fight even with Super-Naruto-AIDS had he really wanted too.
Itachi is somewhat of an Enigma. He is the only person in the entire series who has some unknown illness, yet has such an impact on the entire story to the point where he was able to manipulate others like/equal to Madara as well as being what I believe to be a top-3 when it comes to strategies. He continuously and I would argue was the DRIVING force that allowed Sasuke to become as powerful at the end as well pushing Naruto when he needed it or when Itachi wanted to. (Like I said I can go on forever....:devil
That being said, I do believe back then it was stated as fact and can only speculate now if it would be the ultimate defense. My whole point above was to argue that had Itachi never been sick, reached whatever his full potential was, etc... It probably would have been the Ultimate Defense because as I stated he is just so great at strategies, reaction time, thinking outside the box, etc... and since it was a one of a kind item....it pretty much all makes sense why Itachi was so great and had to be sick
Yata according to the databook cause ALL attacks to "Lose Their Meaning" by "Changing its Properties"
Many People agree that is true but say that it provides only frontal defense thus having a weak point but many people over look the fact that the databook says that Yata "Has no physical form"... thus it can "change it's properties" including shape as displayed below.
