So how the Hell is Orochimaru recruiting Hidan, when he should be against the Akatsuki?

Deceit maybe? If Orochimaru was recruting Hidan, it sounds implied he was probably after his body lols. He was after Itachi and even Pein from what we saw as well to get the sharingan and Rinnegan. Lols maybe you're right, though it sounds more like a plot hole or inconsistency, and in all honestly, it doesn't exactly effect the story that much for me. I still have to play it though so we'll see. Thanks for the info.

Yeah, but there's kind of already a few holes and implied retcons in the manga though lols. Double mangekyou being required for susuano'o rather than Tsukuyomi and Amaterasu, Itachi's age when he joined Akatsuki, etc.
