More importantly, what you seem to not get is that Itachi inherited the crows as means to honor his lost friend, and as a memento. Do you really think the crows make up even 5% of his power? We're not talking about Minato, who's FTG makes up 100% of his fighting style. Sharingan, various Genjutsu, Fire Style (plus Wind, Water and Yin/Yang, according to the DB), Tsukuyomi, Amaterasu, Susano'o with spirit weapons, Izanami. All of them have nothing to do with crows.
