I think grey sigs can be great from time to time.
They add that sense of simplicity that makes it seem really cool. I agree, though, that you have to be careful when choosing what to make in the greyscale, and what to leave colorful. Simpler sigs can do with the greyscale while others need more "emotion" and detail.
