Due to having much more chakra than itachi, Kakashi can use many clones to counter amaterasu and tsykomi,
Raiden will cut through ribcage susanno with ease + the clones can shot beast runners from all directions.
The original and the clones can stay in movement so amaterasu won't land like hebi sasuke avoided it by only running.
Using tsykomi is risky because the possibility is high that itachi will catch a clone instead of the original and this means wasting much chakra and stamina.
Even without the sharingan kakashi has a counter to everything in itachis arsenal.
