The Databook is complementary information that covers all what manga couldn't cover. But it is official since it was written by Kishimoto himself.

So, the best explanation I could give is that it's a keyname. It would be problematic for other shinobi to know that SZ was a Zetsu from the start. It would have ruined the Tsuki no Me.
