Sakura's technique was automatic and already on by the time Madara stabbed her. Unlike the impure world reincarnations, her flesh isn't a technique and thus rebuilding it wouldn't have the same problems as say Minato fixing his arm. Besides plot armor because she's a main character, it's also a really nifty technique. it does come at a price and with how young Sakura managed to get her seal, it can be safe to say she's probably not living to see fifty, so if you really want assurance of a death that badly, know she'll probably die middle-aged.

That was shaped the way it was due to a technique. Minato's sole existence during the fight was a technique. It was not living flesh (considering the Zetsu were killed for the technique) and thus it had no regenerative powers outside the technique.

Another way to put it is that maybe if Naruto was ever stabbed by one of the black rods, he'd perhaps be able to recover because of Kyuubi's cell regeneration.

My mileage might vary on this answer. It is an unexplained plothole but I think it has more to do with the fact we don't exactly know the mechanics of Sakura's seal or how the black rods really work.
