Sakura's technique was automatic and already on by the time Madara stabbed her. Unlike the impure world reincarnations, her flesh isn't a technique and thus rebuilding it wouldn't have the same problems as say Minato fixing his arm. Besides plot armor because she's a main character, it's also a really nifty technique. it does come at a price and with how young Sakura managed to get her seal, it can be safe to say she's probably not living to see fifty, so if you really want assurance of a death that badly, know she'll probably die middle-aged.
Minato's flesh wasn't a technique. It was the flesh of a Zetsu, remember?
