--the only way for Muu to bypass susanoo is jinton however to do that he becomes visible therefore allowing itachi the enough time to burn him through amaterasu,
-He cannot see Mu due to his invisibility technique that erases chakra(so the Sharingan can't see it). However, the sharingan sees things with perfect clarity and takes in every detail. So things like footprints, or slight changes in air currents will get picked up, so Itachi would locate Mu's position. We have seen mu leave footprints in the manga:

-Itachi should be able to keep a ribcage/v2 Susanoo on for a while(to prevent Mu from stabbing him with a blade), so the only move that Mu has that can break through in Jinton. If he uses Jinton, he has to become visible and stay still for a few seconds, so that leaves him vulnerable to Amaterasu.
-If Mu continues to stay invisible, Itachi should pick him off with YM or susanoo sword by locating him with the method above.
So overall, I think itachi wins high diff. Although it's a close fight either way.

2. He flies out of Amaterasu's range and nukes him from above
Amaterasu doesnt really have a range, the flames spawn on whatever the user can see,
if itachi can see muu, then he gets hit, the range doesnt matter,
and Muu is never nuking him, when the time taken to form a reasonable amount of jinton would be more than enough for itachi to set him ablaze
