You're forgetting two things. The purpose of the meeting. It was to discuss Sasuke's recent act, which was joining the Akatsuki and attacking the jinchuriki of another village. Of course they're going to attack on sight, just like guards at a UN summit will attack a confirmed member of a terroist organization on sight.
Secondly they were in the land of Iron, the Samurais home. Sasuke was a known criminal that had just attacked another village and kidnapped their jinchuriki. You expect them to stand down and not attack because Sasuke said so? LOL. Hell no.
