She does not necessarily have to -eat- the fruit - but its final deposition is her responsibility.
I expect this to end much in the way that Inuyasha did - with the Shikon Jewel being wished away - the world is to be lived in, not to be controlled. Hinata, as a well versed Taoist, already understands this. Thus, even if she were to consume the fruit - it would be with the knowledge that its power is to be in harmony with the Tao rather than to create further disruption.
Or it will be her that teaches this lesson to the one who ultimately decides to either consume it or 'return it to the earth' (however that might work in context).
A fully 'awakened' Hyuuga would, literally, be a force of nature - even before consuming the fruit. As Naruto commented on Kaguya's movements - she was 'one with nature.' This is the power of the Byakugan - the Taoist Sage. I actually liked how she was using abilities without it really being clear what exactly happened or what, precisely, the source of the ability was. The characters are allowed to be a little bit more aware of what is going on - but we weren't treated to excessive monologues explaining each and every ability. Shit just happened and we were let in on a few of the character's thoughts as to what was going on.
