Sasuke is thinking long term, not just current. When he dies, the Rinnegan will be lost until it randomly mutates into someone again, either through his diluted lineage or maybe an actual random mutation, and that is very, very unlikely.

Sasuke isn't immortal, it's guaranteed the Rinnegan will one day be lost, but the Bijuu aren't. Even after Sasuke dies, the Bijuu can still be used as weapons.

It's more practical to eliminate the Bijuu because that eliminates a threat for hundreds of years.

Not only that, but the threat depends on the usage. Sasuke has no intention on attacking the world, but to fix it, so why would he deem his Rinnegan a threat to its safety?

But why do you think Sasuke will just die? Why do you assert he won't seal his rinnegan and his other eye? Why do you assert he won't use Izanagi? Why do you assert he won't eat the fruit and become "eternal and immortal"? Why do you think he won't just destroy his eye prior to dying? There are so many possibilities.

And do you think that Sasuke cannot recognize a drug? Even after becoming immune to all poisons and being trained by the best medic ninja? Why do you think Sasuke will be alone? You know that sensing barriers exist? There is his team, and supporters of his method may arise. It's not like Sasuke will live amidst the swamps in a wooden house lol. Let's not get ridicolous.
